F.A.B. Concepts Inc. was founded in October 1999 by Sean Bayley and Jost Rittershaus with the opening of Redwood Grille & Bar. F.A.B. Concepts is an independently owned, multiple concept hospitality company operating in the GTA. Our establishments are:

Irish Pubs: The Irish are known for bringing many wonderful gifts to the Western World, such as great beers, tasty whiskey’s, wonderful music, Irish cuisine and now F.A.B.Concepts continues that trend with a a family of Authentic Irish Pubs The Foggy Dew, Brazen Head, Murphy's Law, Pogue Mahone Irish Pub, Ned Devine's, The Watermark Irish Pub and Restaurant, The Pour House located in thriving neighbourhoods. The alehouses pays close attention to every Irish-based tradition in many of the watering holes across the pond.

Brew Pubs: A modern day brew pub with the heritage & charm of days gone by, set in the heart of Toronto's historic Distillery District. Mill St. Brew Pub opened in October 2006 in Toronto's Historic Distillery District in the original Gooderham and Worts tankhouse that housed the original Brewery from late 2002. It creates a wonderful setting for our restaurant and bar with its high ceilings, large skylights and wooden beams. Mill Street Brew Pub Ottawa - Coming soon - Fall 2011.

Urban Taverns: NOW OPEN at Corus Quay  - Against the Grain - A casual Urban Tavern where people gather to enjoy sticky ribs with a local brew, a house smoked Bacon Mac n’ Cheese made with black truffle infused Pecorino cheese, rustic flatbreads or traditional cocktails with a twist. All served in a sophisticated presentation and service. Interesting local and European brews will be tapped regularly along with interesting new and old world wines. Of course we can’t forgot the cocktails including our own signature “Against the Grain” made with Canadian whiskey.

Italian Eateries: Coming in 2011 - Bar Vespa in Liberty Village - Bar Vespa is a casual Italian tavern where people gather to enjoy antipasti with wine, a plate of pasta or Italian feast, all served with the warmth and hospitality of family. Located in Liberty Village, this rustic, casual Italian bar brings with it a philosophy of fresh ingredients and friendly staff accompanied by booming laughter and flowing wine.  Bar Vespa's menu is inspired by classic Italian cuisine that showcases seasonal ingredients, new creations and everyone's favourites. Featuring daily house made pastas, homemade gelato, traditional Neapolitan thin crust pizza and comforting, traditional meals.

Since 2000, F.A.B. Concepts has made a tremendous impact on the Toronto restaurant industry by continuing to meet or exceed guest expectations.
